Cinnamon Candied Almonds

Are you ready for the easiest Christmas gift idea ever?! These Cinnamon Candied Almonds are so crunchy and addictive, they taste JUST like the ones you get at the fair, or wherever they sell those little paper cones filled with sweet, crunchy, caramelized nuts. If you don’t know what I mean, then you need to get up from under that rock you’ve been living under, and make these so you can see what I’m drooling about!

IMG_6556Mmmmmmm. Just look at that crunchy coating on the outside! You’ll swear these were battered and fried, but nope! They’re actually coated in a whipped egg white mixture. The frothy egg whites create this crispy meringue-like exterior, that adheres to sugar and cinnamon to the almonds, but also gives it that tasty crunch!

IMG_6589 IMG_6590These would seriously make the perfect gift for neighbors and coworkers. You could also use pretty much water nuts you’d like. I like almonds, but pecans would also be delicious!

IMG_6428 IMG_6443 IMG_6447 IMG_6456To make these bad boys, all you have to do is whip up an egg white and vanilla until its nice and frothy, add in the sugar. cinnamon, and salt, and bake.

IMG_6457 IMG_6598These would also be good if you used a combination of nuts; like almonds, pecan, and walnuts! Hmmmm maybe I’ll have to remake these… or drizzled with chocolate?! Ok I’ll stop giving myself ideas now.  IMG_6591 IMG_6548

But seriously what if you put these over ice cream?! Or is Arizona the only state that still consumes ice cream in the winter?

Instructions
  1. Preheat oven to 300 degrees F. Line a baking sheet with parchment paper and set aside.
  2. Whisk together egg white, water, and vanilla until very frothy. Stir in the almonds until they are fully coated. Add in sugars, cinnamon, and salt; stir until evenly coated.
  3. Evenly spread nuts onto the baking sheet into an even layer. Bake for 1 hour, stirring half way through. Cool completely.
Recipe Notes

I prefer my almonds really toasted throughout, so I toast mine first, then let them cool and proceed with the recipe, but you can just use raw almonds and they will still get crunchy in the oven!
