Salted Caramels

All hail Queen Karen (my mom). Here’s another one of her famous Christmas treats! She’s been making homemade soft caramels for as long as I can remember; and this year, I decided to add my own little special touch by topping them with a pinch of flakey sea salt. Of course I had her make the caramels; I just sprinkled over some salt… so technically I still helped make them, right?

English Toffee

This is my Mom’s recipe for English Toffee that tastes JUST LIKE Almond Roca that you buy at the store. It’s so light and crispy, with little pockets of melted chocolate and crunchy almonds. You’ll win some serious brownie points if you hand these out for Christmas!

Red Velvet Sugar Cookies w/ White Chocolate Buttercream

If you make even one cookie this year, this is the cookie you need to make. Soft, tender red velvet sugar cookies topped with a thick layer of silky white chocolate buttercream that isn’t as sweet as some of the other overbearingly sweet sugar cookie frostings out there. Matcha Mint Chip Ice Cream (No-Churn)

I know some of you will question why I’m doing an ice cream recipe in October. Well here’s why– here in Arizona the only things falling from trees, are birds from heat strokes, not pretty orange leaves; and unlike the rest of the country, us Arizonians get to look foreword to 100 degree weather and 2rd degree burns from our seat belt buckles during fall. (though not quite as bad as the 3rd degree burns we get during summer! Or the 1st degree burns just from walking from your car to the store entrance. honestly, no joke.)
